  • 8 lamb rib chops (about 2 pounds), frenched
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 lemon, zested
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup whole milk
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons fresh chives, chopped
  • 1/4 cup Parmesan cheese, grated
  • Salt and white pepper to taste

Instructions

  1. Combine olive oil, minced garlic, chopped rosemary, thyme, salt, pepper, and lemon zest in a bowl. Coat the lamb chops thoroughly with this mixture and let marinate for 20-30 minutes.
  2. Start the potatoes in cold, salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Prepare shrimp while potatoes cook.
  3. Heat 2 tablespoons of butter in a skillet over medium heat. Add half the minced garlic and cook until fragrant. Add shrimp and cook until just pink and opaque, about 2 minutes per side. Remove from heat and chop two-thirds of the shrimp.
  4. Preheat your grill to high heat (approximately 450°F). Grill lamb for 2-3 minutes per side for medium-rare or 3-4 minutes for medium.
  5. Drain the cooked potatoes and return them to the pot over low heat. Add warm milk, remaining butter, and garlic. Mash until smooth, then fold in the chopped shrimp, Parmesan cheese, and chives.
  6. Allow lamb chops to rest for 5-10 minutes, then serve with shrimp mashed potatoes, garnished with reserved whole shrimp.

Notes

For a healthier option, replace half the potatoes with cauliflower or use Greek yogurt instead of butter.
