- 1/4 cup crumbled feta cheese (or cotija/goat cheese)
- 1/4 cup toasted pumpkin seeds (or almonds/walnuts)
- 2 ripe avocados
- 1/4 cup Greek yogurt (or coconut yogurt)
- 2 tablespoons lime juice
- 1 garlic clove, minced
- 1/4 cup cilantro, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1–2 tablespoons water to adjust consistency
Instructions
- Prepare the chicken: Season chicken breasts and grill for 6-7 minutes per side until cooked through.
- Create the avocado dressing: Blend avocados, Greek yogurt, lime juice, garlic, cilantro, and olive oil until smooth.
