A unique and refreshing grape ice cream that combines the sweet-tart flavor of grapes with creamy indulgence.
Ingredients

- 2 cups fresh Concord grapes (or 1½ cups 100% grape juice)
- 1 cup heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar (or ½ cup honey)
- 3 large egg yolks (or ¼ cup coconut cream)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Wash the grapes thoroughly and remove them from stems. Place in a medium saucepan with 2 tablespoons of water. Cook over medium heat for 5-7 minutes until the grapes burst and release their juices.
- Press the cooked grape mixture through a fine-mesh strainer to remove skins and seeds.
- In a clean saucepan, combine the milk and cream. Heat until steaming but not boiling. Whisk the egg yolks, sugar, and salt in a separate bowl until pale and slightly thickened.
- Gradually pour the hot cream mixture into the egg mixture while continuously whisking to prevent curdling.
- Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until it reaches 170°F.
- Stir the grape puree, lemon juice, and vanilla extract into the custard. Chill for at least 4 hours or overnight.
- Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions.
- Transfer to a freezer-safe container, cover with parchment paper, and freeze for at least 4 hours until firm.
Notes
Substitute heavy cream with Greek yogurt for a lighter version and use monk fruit sweetener for a low-glycemic option.
