Description

A unique and refreshing grape ice cream that combines the sweet-tart flavor of grapes with creamy indulgence.


Ingredients

  • 2 cups fresh Concord grapes (or 1½ cups 100% grape juice)
  • 1 cup heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar (or ½ cup honey)
  • 3 large egg yolks (or ¼ cup coconut cream)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Wash the grapes thoroughly and remove them from stems. Place in a medium saucepan with 2 tablespoons of water. Cook over medium heat for 5-7 minutes until the grapes burst and release their juices.
  2. Press the cooked grape mixture through a fine-mesh strainer to remove skins and seeds.
  3. In a clean saucepan, combine the milk and cream. Heat until steaming but not boiling. Whisk the egg yolks, sugar, and salt in a separate bowl until pale and slightly thickened.
  4. Gradually pour the hot cream mixture into the egg mixture while continuously whisking to prevent curdling.
  5. Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until it reaches 170°F.
  6. Stir the grape puree, lemon juice, and vanilla extract into the custard. Chill for at least 4 hours or overnight.
  7. Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions.
  8. Transfer to a freezer-safe container, cover with parchment paper, and freeze for at least 4 hours until firm.

Notes

Substitute heavy cream with Greek yogurt for a lighter version and use monk fruit sweetener for a low-glycemic option.
