  • 2 large eggs, room temperature (or flax eggs)
  • 1 teaspoon vanilla extract (clear vanilla extract)
  • 8 oz cream cheese, softened (or Neufchâtel cheese)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1/3 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease thoroughly.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate medium bowl, whisk together milk, oil, eggs, and vanilla extract until fully combined.
  4. Pour the wet ingredients into the well of dry ingredients and stir just until combined.
  5. Beat softened cream cheese, sugar, vanilla, and flour until smooth and creamy.
  6. Combine brown sugar, cinnamon, and melted butter in a small bowl until it resembles wet sand.
  7. Fill each muffin cup 1/3 full with batter, add a tablespoon of cream cheese filling, then another layer of batter. Sprinkle the cinnamon swirl mixture on top and swirl with a toothpick.

Notes

For a lighter version, use Neufchâtel cheese and reduce sugar or oil as needed for healthier alternatives.
