An elegant dish combining the sweetness of golden beets, creamy burrata, crunchy pistachios, and bright citrus flavors.

- 4 medium golden beets, scrubbed clean
- 2 balls of fresh burrata cheese (about 8 oz total)
- 1/3 cup shelled pistachios, roughly chopped
- 1 orange, zested
- 1 lemon, zested
- 3 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 2 teaspoons flaky sea salt
- Fresh cracked black pepper to taste
- 2 tablespoons fresh herbs (mint, basil, or chives)
Instructions
- Preheat your oven to 400°F (200°C). Trim the tops and bottoms of the beets, then wrap each beet individually in aluminum foil. Place on a baking sheet and roast for 45-60 minutes until tender when pierced with a knife.
- Combine the olive oil, honey, half of both the orange and lemon zest, 1 teaspoon of flaky salt, and pepper in a small bowl. Whisk until emulsified.
- Heat a dry skillet over medium heat and add the chopped pistachios. Toast for 3-4 minutes, stirring frequently until fragrant and lightly browned.
- Peel the roasted beets by rubbing off the skins using a paper towel or your fingers. Slice the peeled beets into even rounds, approximately ¼-inch thick.
- Assemble the stacks by arranging the beet slices in a slightly overlapping pattern, placing burrata pieces atop the beets, drizzling with citrus dressing, and sprinkling with the pistachio-citrus mixture and fresh herbs.
Notes
Allow burrata to come to room temperature before serving for optimal flavor.
