  • 1 medium red bell pepper, sliced into thin strips
  • 1 medium yellow bell pepper, sliced into thin strips
  • 2 medium carrots, julienned
  • 1 medium zucchini, sliced into half-moons
  • 1 cup snap peas, strings removed
  • 1 small broccoli head, cut into florets
  • 1 tablespoon low-sodium soy sauce (substitute: coconut aminos or tamari)
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh herbs (parsley, basil, or chives), chopped

Instructions

  1. Prepare Your Vegetables: Wash all vegetables thoroughly and pat dry. Cut them into similar-sized pieces.
  2. Heat Your Pan: Place a large wok or skillet over medium-high heat. Add 2 tablespoons of butter once hot.
  3. Add Aromatics: Add the minced garlic to the melted butter and stir constantly for 30 seconds until fragrant.
  4. Add Dense Vegetables First: Add carrots and broccoli first and stir-fry for 2-3 minutes.
  5. Add Remaining Vegetables: After 2 minutes, add bell peppers and snap peas, then zucchini. Cook for 1 minute more.
  6. Season the Dish: Add remaining butter, soy sauce, lemon juice, and red pepper flakes if using.
  7. Finish and Serve: Remove from heat, sprinkle with fresh herbs, and serve immediately.

Notes

For a lighter version, reduce butter to 2 tablespoons and supplement with vegetable broth. Store leftovers in an airtight container for up to 3 days.
