- 1.5 pounds sirloin steak, cut into 1-inch cubes
- 4 tablespoons unsalted butter, divided
- 6 garlic cloves, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 1 teaspoon red pepper flakes (optional)
- 1 cup heavy cream
- ¾ cup freshly grated Parmesan cheese
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper, to taste
Instructions
- Pat the steak cubes completely dry with paper towels. Season with salt and black pepper and let sit at room temperature for 5-10 minutes.
- Heat a large cast-iron skillet over high heat until smoking. Add olive oil and 2 tablespoons of butter. Add steak in a single layer and sear for 2-3 minutes without disturbing.
- Flip the steak and cook for another 1-2 minutes for medium-rare. Remove the steak and tent with foil to keep warm.
- Reduce heat and add the remaining 2 tablespoons of butter and minced garlic, rosemary, and red pepper flakes. Toss the steak bites in this mixture for 1 minute.
- Add 2 tablespoons of butter and minced garlic to the skillet, sauté for 30 seconds. Pour in heavy cream, scrape the bottom of the pan, and simmer for 2-3 minutes.
- Whisk in the Parmesan cheese until melted. Return the steak bites to the skillet, toss to coat, and serve immediately.
Notes
For a lighter version, substitute Greek yogurt for half of the cream. Serve with roasted veggies for a balanced meal.
