Ingredients

  • 1.5 pounds sirloin steak, cut into 1-inch cubes
  • 4 tablespoons unsalted butter, divided
  • 6 garlic cloves, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Pat the steak cubes completely dry with paper towels. Season with salt and black pepper and let sit at room temperature for 5-10 minutes.
  2. Heat a large cast-iron skillet over high heat until smoking. Add olive oil and 2 tablespoons of butter. Add steak in a single layer and sear for 2-3 minutes without disturbing.
  3. Flip the steak and cook for another 1-2 minutes for medium-rare. Remove the steak and tent with foil to keep warm.
  4. Reduce heat and add the remaining 2 tablespoons of butter and minced garlic, rosemary, and red pepper flakes. Toss the steak bites in this mixture for 1 minute.
  5. Add 2 tablespoons of butter and minced garlic to the skillet, sauté for 30 seconds. Pour in heavy cream, scrape the bottom of the pan, and simmer for 2-3 minutes.
  6. Whisk in the Parmesan cheese until melted. Return the steak bites to the skillet, toss to coat, and serve immediately.

Notes

For a lighter version, substitute Greek yogurt for half of the cream. Serve with roasted veggies for a balanced meal.
