  • 1 pound ground chicken (preferably thigh meat)
  • 1/2 cup breadcrumbs (panko preferred)
  • 1/4 cup finely grated Parmesan cheese
  • 1 large egg, beaten
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large sweet onions, thinly sliced
  • 4 tablespoons butter, divided
  • 3 cloves garlic, minced
  • 1 tablespoon flour
  • 1 cup beef broth (low-sodium preferred)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves
  • 1 cup Gruyère cheese, shredded (or Swiss cheese)
  • Salt and pepper to taste

Instructions

  1. Combine ground chicken, breadcrumbs, Parmesan, beaten egg, minced garlic, parsley, thyme, salt, and pepper in a large bowl. Mix gently until just combined.
  2. Roll the mixture into 1-inch balls and lightly oil your hands to prevent sticking. Brown the meatballs in a skillet over medium heat for about 6-8 minutes.
  3. Remove the meatballs and set aside. In the same skillet, add the remaining butter and sliced onions, and cook on medium-low heat for 15-20 minutes until golden brown.
  4. Add minced garlic to the caramelized onions and cook for 1 minute. Sprinkle flour over the onions, stirring for 2 minutes. Gradually add beef broth, Worcestershire sauce, and thyme, and simmer for 5 minutes.
  5. Return the browned meatballs to the skillet, cover, and simmer for 8-10 minutes until cooked through, then sprinkle with Gruyère cheese and let melt.

Notes

For gluten-free, replace breadcrumbs with almond flour or pork rinds; for dairy-free, use nutritional yeast and dairy-free butter.
