Ingredients

  • 1 pound (450g) ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg, lightly beaten
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons butter
  • 2 additional garlic cloves, minced
  • 12 ounces (340g) fettuccine pasta
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken Balls: In a large mixing bowl, combine ground chicken, breadcrumbs, beaten egg, minced garlic, parsley, Italian seasoning, salt, and pepper. Mix thoroughly but gently. With slightly damp hands, form the mixture into 16-20 evenly sized balls.
  2. Cook the Chicken Balls: Heat a large skillet over medium heat. Add 2 tablespoons of butter and once melted, add the chicken balls. Cook for 8-10 minutes until golden brown on all sides and cooked through. Transfer to a plate and keep warm.
  3. Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter and additional minced garlic. Sauté for 30-60 seconds until fragrant. Pour this garlic butter over the cooked chicken balls and gently toss to coat.
  4. Prepare the Pasta: While the chicken balls are cooking, bring a large pot of salted water to a boil. Cook the fettuccine until al dente. Reserve 1/2 cup of pasta water before draining. In a separate pan, heat olive oil over medium heat and sauté the onion until translucent.
  5. Make the Creamy Parmesan Sauce and Combine: Add heavy cream to the onions and bring to a simmer. Gradually whisk in the Parmesan cheese until melted and smooth. Add the drained pasta directly to the sauce, tossing to coat. Stir in fresh basil and season with salt and pepper. Serve topped with garlic butter chicken balls.

Notes

For a healthier alternative, use Greek yogurt mixed with milk instead of heavy cream and whole wheat pasta for extra fiber.
