Instructions
- Prepare your taco shells: Brush each tortilla lightly with coconut oil or melted butter on both sides. Mix cinnamon and 1 tablespoon of honey in a small bowl and lightly brush one side of each tortilla with this mixture. Warm a non-stick skillet over medium heat and place tortillas flat for 30 seconds, then fold gently and hold in a taco shape for another 30 seconds until slightly crisp but still pliable.
- Mix the Greek yogurt with the remaining tablespoon of honey or maple syrup until smooth to prepare your yogurt base.
- Spread a generous tablespoon of the yogurt mixture inside each shell for the Tropical Paradise variation. Layer with diced mango, pineapple chunks, and kiwi slices. Sprinkle with toasted coconut flakes and garnish with fresh mint leaves.
