Ingredients

  • 1 ½ cups graham cracker crumbs
  • â…“ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 3 large eggs
  • ¾ cup finely chopped pistachios (plus more for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9×13 inch baking pan and line it with parchment paper.
  2. Combine the graham cracker crumbs, sugar, and melted butter until well mixed. Press into the bottom of the prepared baking pan.
  3. Beat the softened cream cheese with a hand mixer until smooth. Add the sugar and vanilla, mixing until combined.
  4. Add the sour cream followed by the eggs, one at a time. Scrape down the sides to ensure a smooth mixture.
  5. Fold in the chopped pistachios. Pour the mixture over your prepared crust, smoothing it out.
  6. Bake for about 45-50 minutes, until the center is set but slightly jiggly.
  7. Cool at room temperature for an hour, then refrigerate for at least 4 hours.
  8. Lift the bars out using the parchment paper, slice into squares, and top with extra pistachios.

Notes

For neat slices, run your knife under hot water before cutting. You can substitute pistachios with crushed cookies or raspberries for a twist.
