- 4 cups powdered sugar
- ⅓ cup freeze-dried strawberry powder (for frosting)
- 3 tablespoons fresh strawberry puree (for frosting)
- 1 teaspoon vanilla extract (for frosting)
- Pinch of salt (for frosting)
- Fresh strawberries for decoration
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- Wash, hull, and blend fresh strawberries for puree, then strain to remove seeds.
- Pulse freeze-dried strawberries in a food processor to make strawberry powder.
- Cream together butter and sugar until light and fluffy (about 3-5 minutes).
- Add eggs one at a time, mixing well after each addition. Fold in strawberry puree and vanilla extract.
- Whisk together flour, baking powder, baking soda, salt, and freeze-dried strawberry powder in a separate bowl.
- Gradually mix dry ingredients into wet ingredients, alternating with milk, until just combined.
- Divide the batter evenly between prepared pans and bake for 30-35 minutes.
- Beat butter until creamy, then gradually add powdered sugar, freeze-dried strawberry powder, strawberry puree, vanilla, and salt to prepare frosting.
Notes
For a healthier version, consider substituting half the all-purpose flour with whole wheat flour or using Greek yogurt in place of half the butter.
