  • ¼ cup freeze-dried strawberry powder
  • ½ cup whole milk
  • 2½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 23 drops red food coloring (optional)
  • 1½ cups unsalted butter (for frosting)
  • 4 cups powdered sugar
  • ⅓ cup freeze-dried strawberry powder (for frosting)
  • 3 tablespoons fresh strawberry puree (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Fresh strawberries for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. Wash, hull, and blend fresh strawberries for puree, then strain to remove seeds.
  3. Pulse freeze-dried strawberries in a food processor to make strawberry powder.
  4. Cream together butter and sugar until light and fluffy (about 3-5 minutes).
  5. Add eggs one at a time, mixing well after each addition. Fold in strawberry puree and vanilla extract.
  6. Whisk together flour, baking powder, baking soda, salt, and freeze-dried strawberry powder in a separate bowl.
  7. Gradually mix dry ingredients into wet ingredients, alternating with milk, until just combined.
  8. Divide the batter evenly between prepared pans and bake for 30-35 minutes.
  9. Beat butter until creamy, then gradually add powdered sugar, freeze-dried strawberry powder, strawberry puree, vanilla, and salt to prepare frosting.

Notes

For a healthier version, consider substituting half the all-purpose flour with whole wheat flour or using Greek yogurt in place of half the butter.
