  • 1/4 cup unsalted butter, softened
  • 1/2 teaspoon cinnamon
  • Whipped cream or vanilla ice cream (optional for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. Mix the dry ingredients in a medium bowl: flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. Combine the wet ingredients in another bowl: melted butter, eggs, and vanilla extract.
  4. Create the batter by folding the wet ingredients into the dry mixture. Stir in the diced peaches gently.
  5. Prepare the crumble topping by mixing flour, brown sugar, rolled oats, softened butter, and cinnamon in a separate bowl until crumbly.
  6. Fill each cupcake liner with batter, filling about two-thirds full, and sprinkle crumble topping over each.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool for 5 minutes in the pan, then transfer to a wire rack. Serve warm or at room temperature with whipped cream or ice cream.

Notes

Fresh peaches are ideal, but canned peaches work just as well (be sure to drain well). Feel free to use other fruits like apples or berries.
