Ingredients

  • 1 cup pistachios, shelled and finely chopped
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.
  2. Mix together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time and then add the vanilla extract.
  4. Combine flour, baking powder, baking soda, and salt in another bowl. Gradually add to the creamed mixture alternately with milk.
  5. Fold in the chopped pistachios.
  6. Spoon the batter into the cupcake liners, filling them about two-thirds full. Bake for 18-20 minutes.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Frost with your favorite icing or sprinkle more chopped pistachios on top.

Notes

Feel free to substitute pistachios with other nuts if there are allergies. Store leftovers in an airtight container at room temperature for up to three days.
