  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1 cup buttermilk
  • 1 cup finely chopped pistachios
  • 1/2 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 23 tablespoons heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 cup chopped pistachios (for garnish)
  • A pinch of green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Creaming together the softened butter and granulated sugar until fluffy.
  3. Add in the eggs, one at a time, then the vanilla extract.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  5. Add the dry mix to the wet ingredients, alternating with the buttermilk, mixing until just combined.
  6. Fold in the chopped pistachios.
  7. Spoon the batter into the lined muffin tin, filling about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Beat together the softened butter and powdered sugar for the frosting until smooth, then add heavy cream and vanilla extract.
  10. Frost the cooled cupcakes generously and sprinkle with chopped pistachios.

Notes

Make sure the cupcakes are completely cool before frosting. If short on time, store-bought frosting works well.
