- 2 cups granulated sugar
- 4 large eggs

- 1 cup buttermilk
- 1 cup finely chopped pistachios
- 1/2 cup unsalted butter, softened (for frosting)
- 3 cups powdered sugar
- 2–3 tablespoons heavy cream
- 1 teaspoon vanilla extract (for frosting)
- 1/4 cup chopped pistachios (for garnish)
- A pinch of green food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Creaming together the softened butter and granulated sugar until fluffy.
- Add in the eggs, one at a time, then the vanilla extract.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl.
- Add the dry mix to the wet ingredients, alternating with the buttermilk, mixing until just combined.
- Fold in the chopped pistachios.
- Spoon the batter into the lined muffin tin, filling about two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Beat together the softened butter and powdered sugar for the frosting until smooth, then add heavy cream and vanilla extract.
- Frost the cooled cupcakes generously and sprinkle with chopped pistachios.
Notes
Make sure the cupcakes are completely cool before frosting. If short on time, store-bought frosting works well.
