These miniature delights combine the richness of German chocolate with the comfort of pecan pie, perfect for gatherings or portion-controlled indulgence.


Ingredients

  • 6 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 1 cup pecan halves, plus extra for garnish
  • ⅔ cup semi-sweet chocolate chips (72% cacao recommended)
  • 3 large eggs, room temperature
  • ¾ cup light corn syrup (honey can substitute)
  • ½ cup brown sugar, packed
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup sweetened shredded coconut
  • ⅓ cup evaporated milk
  • ¼ cup brown sugar
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or thoroughly grease each cup.
  2. Mix graham cracker crumbs, melted butter, sugar, and salt until it resembles wet sand.
  3. Bake the empty crusts for 5 minutes until they are just set but not browned.
  4. Whisk together eggs, corn syrup, brown sugar, melted butter, vanilla extract, and salt until smooth.
  5. Chop ½ cup of the pecans coarsely and fold them with chocolate chips into the filling mixture.
  6. Spoon the filling into each pre-baked crust, filling each about ¾ full.
  7. Bake for 20-25 minutes until the filling is set but still slightly jiggly in the center.
  8. Combine the coconut topping ingredients in a small saucepan and cook over medium heat for about 5 minutes until thickened.
  9. Spoon a small amount of coconut topping onto each pie bite and return to the oven for the final 3-5 minutes.
  10. Cool the pie bites in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use a non-stick mini muffin tin and ensure your ingredients are at room temperature.
