- ¾ cup light corn syrup (honey can substitute)
- ½ cup brown sugar, packed
- 4 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 cup sweetened shredded coconut
- ⅓ cup evaporated milk
- ¼ cup brown sugar
- 2 tablespoons butter
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or thoroughly grease each cup.
- Mix graham cracker crumbs, melted butter, sugar, and salt until it resembles wet sand.
- Bake the empty crusts for 5 minutes until they are just set but not browned.
- Whisk together eggs, corn syrup, brown sugar, melted butter, vanilla extract, and salt until smooth.
- Chop ½ cup of the pecans coarsely and fold them with chocolate chips into the filling mixture.
- Spoon the filling into each pre-baked crust, filling each about ¾ full.
- Bake for 20-25 minutes until the filling is set but still slightly jiggly in the center.
- Combine the coconut topping ingredients in a small saucepan and cook over medium heat for about 5 minutes until thickened.
- Spoon a small amount of coconut topping onto each pie bite and return to the oven for the final 3-5 minutes.
- Cool the pie bites in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, use a non-stick mini muffin tin and ensure your ingredients are at room temperature.
