A refreshing and protein-packed cucumber salad featuring savory bacon and rich cheddar cheese.
Ingredients

- 2 large cucumbers, thinly sliced
- 6 strips of bacon, cooked crisp and crumbled
- 1 cup sharp cheddar cheese, cubed or shredded
- 1/4 red onion, thinly sliced
- 3 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon fresh dill, chopped
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Prepare the Cucumbers: Wash cucumbers thoroughly and slice them thinly. If using regular cucumbers, remove seeds before slicing.
- Cook the Bacon: Cook bacon strips in a skillet over medium heat until crispy, about 8-10 minutes. Transfer to paper towels and crumble.
- Prepare the Dressing: In a bowl, whisk together apple cider vinegar, olive oil, honey, salt, and pepper until emulsified. Add chopped dill and stir.
- Assemble the Salad: In a large bowl, combine cucumber slices and red onion. Pour dressing over and toss gently.
- Add Cheese and Bacon: Add cheddar cheese and crumbled bacon, folding gently to combine. Reserve some for topping if desired.
Notes
For a lighter option, substitute turkey bacon or tempeh bacon and use feta instead of cheddar.
