Description

A rich and flavorful salmon dinner featuring fresh herbs and a velvety cream sauce, perfect for any occasion.


Ingredients

  • 4 salmon fillets (6 oz each, preferably wild-caught)
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ¼ cup dry white wine (or chicken broth)
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 lemon, zested and juiced
  • 2 tablespoons butter
  • Salt and freshly ground black pepper to taste
  • 1 shallot, finely diced
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Pat the salmon fillets dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes.
  3. Flip the salmon carefully and cook for an additional 2-3 minutes. Remove and tent with foil.
  4. Add butter to the skillet, then sauté shallots for 2 minutes. Add garlic and sauté for another 30 seconds.
  5. Pour in the white wine and reduce by half, then add heavy cream, lemon zest, and red pepper flakes.
  6. Simmer the sauce for 3-4 minutes to thicken.
  7. Stir in the fresh herbs, infusing the sauce for 2 minutes.
  8. Return the salmon to the skillet, spooning the sauce over it, and cook for 1-2 minutes until heated through.
  9. Finish by squeezing fresh lemon juice over the salmon and garnish with reserved herbs before serving.

Notes

For a lighter alternative, replace half the heavy cream with Greek yogurt and reduce the oil and butter used.
