- 4 salmon fillets (6 oz each, preferably wild-caught)
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- ¼ cup dry white wine (or chicken broth)
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 1 lemon, zested and juiced
- 2 tablespoons butter
- Salt and freshly ground black pepper to taste
- 1 shallot, finely diced
- ½ teaspoon red pepper flakes (optional)
Instructions
- Pat the salmon fillets dry with paper towels and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes.
- Flip the salmon carefully and cook for an additional 2-3 minutes. Remove and tent with foil.
- Add butter to the skillet, then sauté shallots for 2 minutes. Add garlic and sauté for another 30 seconds.
- Pour in the white wine and reduce by half, then add heavy cream, lemon zest, and red pepper flakes.
- Simmer the sauce for 3-4 minutes to thicken.
- Stir in the fresh herbs, infusing the sauce for 2 minutes.
- Return the salmon to the skillet, spooning the sauce over it, and cook for 1-2 minutes until heated through.
- Finish by squeezing fresh lemon juice over the salmon and garnish with reserved herbs before serving.
Notes
For a lighter alternative, replace half the heavy cream with Greek yogurt and reduce the oil and butter used.
