A luxurious yet simple dish combining salmon with creamy garlic mushroom sauce, perfect for special occasions or weeknight dinners.

- 4 salmon fillets (6 oz each, skin-on preferred)
- 8 oz cremini mushrooms, sliced
- 6 cloves garlic, minced
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1 cup heavy cream
- ¼ cup dry white wine
- 2 tablespoons fresh lemon juice
- 1 teaspoon fresh thyme leaves
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Season salmon fillets generously with salt and pepper on both sides. Allow to rest at room temperature for 10 minutes.
- Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side down and cook for 4-5 minutes, then flip carefully and cook for another 2 minutes. Remove and set aside.
- Add 1 tablespoon butter and sliced mushrooms to the same skillet. Cook undisturbed for 2 minutes, then stir and continue cooking for 3-4 minutes until mushrooms begin to brown.
- Reduce heat to medium-low and add remaining butter and minced garlic. Sauté for 1 minute. Pour in white wine and simmer for 2 minutes.
- Add heavy cream, lemon juice, and thyme. Simmer for 3-4 minutes until thicken. Season with salt and pepper.
- Return salmon to the skillet, nestling fillets into the creamy sauce. Simmer gently for 2-3 minutes until cooked through. Garnish with fresh parsley before serving.
Notes
For a lighter version, substitute half the heavy cream with unsweetened almond milk and replace half the butter with olive oil.
