Description

A luxurious yet simple dish combining salmon with creamy garlic mushroom sauce, perfect for special occasions or weeknight dinners.


Ingredients

  • 4 salmon fillets (6 oz each, skin-on preferred)
  • 8 oz cremini mushrooms, sliced
  • 6 cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 cup heavy cream
  • ¼ cup dry white wine
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon fresh thyme leaves
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season salmon fillets generously with salt and pepper on both sides. Allow to rest at room temperature for 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side down and cook for 4-5 minutes, then flip carefully and cook for another 2 minutes. Remove and set aside.
  3. Add 1 tablespoon butter and sliced mushrooms to the same skillet. Cook undisturbed for 2 minutes, then stir and continue cooking for 3-4 minutes until mushrooms begin to brown.
  4. Reduce heat to medium-low and add remaining butter and minced garlic. Sauté for 1 minute. Pour in white wine and simmer for 2 minutes.
  5. Add heavy cream, lemon juice, and thyme. Simmer for 3-4 minutes until thicken. Season with salt and pepper.
  6. Return salmon to the skillet, nestling fillets into the creamy sauce. Simmer gently for 2-3 minutes until cooked through. Garnish with fresh parsley before serving.

Notes

For a lighter version, substitute half the heavy cream with unsweetened almond milk and replace half the butter with olive oil.
