Description

A comforting dish that combines crispy bacon, tender potatoes, and fresh green beans, all enhanced with ranch seasoning.


Ingredients

  • 2 pounds fresh green beans, trimmed and cut into 2-inch pieces
  • 1.5 pounds red potatoes, washed and quartered
  • 8 slices thick-cut bacon, chopped into 1-inch pieces
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup chicken broth
  • ½ teaspoon black pepper
  • Salt to taste
  • Optional: ¼ teaspoon red pepper flakes for heat

Instructions

  1. Cook the chopped bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate, leaving the rendered fat in the pan.
  2. Add the diced onion to the bacon fat and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 30 seconds.
  3. Add the quartered potatoes, sprinkle with half the ranch seasoning, pour in chicken broth, and bring to a simmer. Cover and cook for 10 minutes.
  4. Incorporate the trimmed green beans, remaining ranch seasoning, black pepper, and optional red pepper flakes. Cover and simmer for an additional 10-12 minutes.
  5. Return the cooked bacon to the pan, add butter, and simmer uncovered for 3-5 minutes. Adjust seasoning and serve.

Notes

For a lighter version, use turkey bacon and sweet potatoes. To reduce sodium, use low-sodium broth.
