Description
A comforting dish that combines crispy bacon, tender potatoes, and fresh green beans, all enhanced with ranch seasoning.
Ingredients
Scale
- 2 pounds fresh green beans, trimmed and cut into 2-inch pieces
- 1.5 pounds red potatoes, washed and quartered
- 8 slices thick-cut bacon, chopped into 1-inch pieces
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1 packet (1 oz) ranch seasoning mix
- 1 cup chicken broth
- ½ teaspoon black pepper
- Salt to taste
- Optional: ¼ teaspoon red pepper flakes for heat
Instructions
- Cook the chopped bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate, leaving the rendered fat in the pan.
- Add the diced onion to the bacon fat and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 30 seconds.
- Add the quartered potatoes, sprinkle with half the ranch seasoning, pour in chicken broth, and bring to a simmer. Cover and cook for 10 minutes.
- Incorporate the trimmed green beans, remaining ranch seasoning, black pepper, and optional red pepper flakes. Cover and simmer for an additional 10-12 minutes.
- Return the cooked bacon to the pan, add butter, and simmer uncovered for 3-5 minutes. Adjust seasoning and serve.
Notes
For a lighter version, use turkey bacon and sweet potatoes. To reduce sodium, use low-sodium broth.
