- 8 oz rice noodles or egg noodles
- 2 tbsp vegetable oil
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 red bell pepper, thinly sliced
- 2 medium carrots, julienned
- 2 cups broccoli florets
- 4 green onions, chopped
- 1 cup snap peas
- 3 tbsp oyster sauce
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp sriracha sauce
- 1/2 cup chicken broth
- 1 tsp cornstarch
Instructions
- Marinate the chicken with soy sauce, cornstarch, and sesame oil in a bowl. Let sit for 10 minutes.
- Prepare the noodles according to package instructions, reducing cooking time by 1 minute. Drain and rinse with cold water.
- Mix the sauce ingredients in a small bowl until smooth.
- Cook the marinated chicken in a hot wok for 2-3 minutes until just cooked through. Remove and set aside.
- Stir-fry garlic and ginger for 30 seconds, then add carrots, bell peppers, broccoli, and snap peas, cooking until tender.
- Combine the chicken, noodles, and sauce in the wok, tossing for 2-3 minutes until everything is well coated.
