Description

A classic comfort food dish featuring tender chicken, savory broth, and fluffy dumplings.

Ingredients

Scale
  • 2 pounds bone-in, skin-on chicken thighs
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, diced
  • 3 medium carrots, sliced into ¼-inch rounds
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried sage
  • 6 cups chicken broth
  • 2 bay leaves
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ¾ cup whole milk
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Prepare the Chicken: Season chicken thighs generously with salt and pepper. In a large Dutch oven, heat butter over medium-high heat until foaming. Add chicken, skin-side down, and cook until golden brown, about 5-7 minutes per side. Remove chicken to a plate, leaving fat in the pot.
  2. Build the Flavor Base: Reduce heat to medium and add onions, carrots, and celery. Cook for 5-7 minutes until vegetables soften. Add garlic, thyme, and sage, cooking for another 30 seconds.
  3. Create the Broth: Pour in chicken broth, scraping the pot’s bottom to release browned bits. Add bay leaves and return chicken to pot. Bring to a simmer, cover, and cook for 20-25 minutes.
  4. Shred the Chicken: Remove chicken from the pot and let cool. Discard skin and bones, shred meat, and return it to the pot.
  5. Prepare the Dumpling Dough: Whisk flour, baking powder, and salt in a bowl. In another bowl, combine milk and melted butter, then stir into dry ingredients until just combined.
  6. Cook the Dumplings: Drop rounded spoonfuls of dough into the simmering broth. Cover and cook for 15 minutes without lifting the lid.
  7. Finish and Serve: Remove bay leaves, stir in parsley, taste, and adjust seasoning. Let stand for 5 minutes before serving.

Notes

Use rotisserie chicken to cut prep time. For a healthier option, substitute olive oil for butter.
