- ¾ cup whole milk
- 4 tablespoons unsalted butter, melted
Instructions
- Prepare the Chicken: Season chicken thighs generously with salt and pepper. In a large Dutch oven, heat butter over medium-high heat until foaming. Add chicken, skin-side down, and cook until golden brown, about 5-7 minutes per side. Remove chicken to a plate, leaving fat in the pot.
- Build the Flavor Base: Reduce heat to medium and add onions, carrots, and celery. Cook for 5-7 minutes until vegetables soften. Add garlic, thyme, and sage, cooking for another 30 seconds.
- Create the Broth: Pour in chicken broth, scraping the pot’s bottom to release browned bits. Add bay leaves and return chicken to pot. Bring to a simmer, cover, and cook for 20-25 minutes.
- Shred the Chicken: Remove chicken from the pot and let cool. Discard skin and bones, shred meat, and return it to the pot.
- Prepare the Dumpling Dough: Whisk flour, baking powder, and salt in a bowl. In another bowl, combine milk and melted butter, then stir into dry ingredients until just combined.
- Cook the Dumplings: Drop rounded spoonfuls of dough into the simmering broth. Cover and cook for 15 minutes without lifting the lid.
- Finish and Serve: Remove bay leaves, stir in parsley, taste, and adjust seasoning. Let stand for 5 minutes before serving.
Notes
Use rotisserie chicken to cut prep time. For a healthier option, substitute olive oil for butter.
