  • 1 red bell pepper, sliced (optional)
  • 2 cups heavy cream (or half-and-half for a lighter version)
  • 1 cup chicken broth
  • 2 cups shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and freshly ground black pepper
  • Fresh basil or parsley for garnish

Instructions

  1. Prepare Your Ingredients: Bring a large pot of salted water to boil for the pasta. Season your chicken pieces with salt and pepper and prep all ingredients.
  2. Cook the Pasta and Chicken: Cook the rigatoni until al dente. Heat olive oil and cook the chicken until golden brown.

For a lighter option, substitute with evaporated milk instead of heavy cream and add more vegetables like spinach or zucchini.
