- 1.5 quarts premium vanilla ice cream (softened slightly)
- 1 cup crushed candy canes (approximately 12–15 regular-sized candy canes)
- 1 teaspoon peppermint extract (optional)
- 2 tablespoons milk
- 8 oz whipped topping (thawed)
- Additional crushed candy canes for garnish
- Fresh mint leaves (optional, for garnish)
- Hot fudge sauce (optional, for serving)
Instructions
- Prepare your workspace by lining a standard 9×5 inch loaf pan with plastic wrap.
- Mix the softened ice cream, 3/4 cup of the crushed candy canes, peppermint extract (if using), and milk in a large mixing bowl.
- Transfer half of the ice cream mixture into the prepared loaf pan, then layer with whipped topping and the remaining ice cream mixture.
- Cover the log with plastic wrap and freeze for at least 4 hours, preferably overnight.
- Serve by inverting the log onto a serving platter, removing plastic wrap, and garnishing as desired.
Notes
For a more decadent option, consider using chocolate ice cream instead of vanilla. To best enjoy, serve with warm hot fudge sauce.
