Ingredients

  • 1.5 quarts premium vanilla ice cream (softened slightly)
  • 1 cup crushed candy canes (approximately 1215 regular-sized candy canes)
  • 1 teaspoon peppermint extract (optional)
  • 2 tablespoons milk
  • 8 oz whipped topping (thawed)
  • Additional crushed candy canes for garnish
  • Fresh mint leaves (optional, for garnish)
  • Hot fudge sauce (optional, for serving)

Instructions

  1. Prepare your workspace by lining a standard 9×5 inch loaf pan with plastic wrap.
  2. Mix the softened ice cream, 3/4 cup of the crushed candy canes, peppermint extract (if using), and milk in a large mixing bowl.
  3. Transfer half of the ice cream mixture into the prepared loaf pan, then layer with whipped topping and the remaining ice cream mixture.
  4. Cover the log with plastic wrap and freeze for at least 4 hours, preferably overnight.
  5. Serve by inverting the log onto a serving platter, removing plastic wrap, and garnishing as desired.

Notes

For a more decadent option, consider using chocolate ice cream instead of vanilla. To best enjoy, serve with warm hot fudge sauce.
