- 1 tablespoon cayenne pepper
- 1 tablespoon black pepper
- 1 tablespoon salt
- 2 medium onions, finely chopped
- 2 green bell peppers, diced
- 4 celery stalks, finely chopped
- 6 cloves garlic, minced
- 2 cups long-grain rice
- 4 cups chicken or seafood stock
- 1 can (14 oz) diced tomatoes
- 2 tablespoons Worcestershire sauce
- Hot sauce to taste
- Fresh lemon
- Fresh parsley and green onions for garnish
Instructions
- Combine all spice ingredients in a small bowl and mix thoroughly.
- Pat the salmon and shrimp dry with paper towels and season with Cajun blend.
- Heat oil in a large pan, add onions, bell peppers, and celery, cooking until softened.
- Add garlic and cook until fragrant.
- For Cajun Jambalaya: Add rice to the vegetable mixture, then stock, diced tomatoes, and Worcestershire sauce; bring to a boil.
- Add salmon and shrimp during last 7-10 minutes of cooking.
- For Cajun Sheet Pan Dinner: Arrange seafood and vegetables on a baking sheet and roast at 425°F for 12-15 minutes.
- For Cajun Foil Packets: Bake seafood in foil packets at 400°F for 15-18 minutes.
- Brighten the dish with fresh lemon juice, parsley, and green onions before serving.
Notes
Adjust the cayenne pepper to suit your heat preference. Serve with arugula salad or crusty whole-grain bread.
