  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 tablespoon cayenne pepper
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 2 medium onions, finely chopped
  • 2 green bell peppers, diced
  • 4 celery stalks, finely chopped
  • 6 cloves garlic, minced
  • 2 cups long-grain rice
  • 4 cups chicken or seafood stock
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons Worcestershire sauce
  • Hot sauce to taste
  • Fresh lemon
  • Fresh parsley and green onions for garnish

Instructions

  1. Combine all spice ingredients in a small bowl and mix thoroughly.
  2. Pat the salmon and shrimp dry with paper towels and season with Cajun blend.
  3. Heat oil in a large pan, add onions, bell peppers, and celery, cooking until softened.
  4. Add garlic and cook until fragrant.
  5. For Cajun Jambalaya: Add rice to the vegetable mixture, then stock, diced tomatoes, and Worcestershire sauce; bring to a boil.
  6. Add salmon and shrimp during last 7-10 minutes of cooking.
  7. For Cajun Sheet Pan Dinner: Arrange seafood and vegetables on a baking sheet and roast at 425°F for 12-15 minutes.
  8. For Cajun Foil Packets: Bake seafood in foil packets at 400°F for 15-18 minutes.
  9. Brighten the dish with fresh lemon juice, parsley, and green onions before serving.

Notes

Adjust the cayenne pepper to suit your heat preference. Serve with arugula salad or crusty whole-grain bread.
