- 4 bone-in pork chops (1-inch thick, approximately 8 oz each)
- 6 tablespoons unsalted butter, divided
- 8 garlic cloves, minced (about 3 tablespoons)
- 2 tablespoons fresh thyme leaves (or 2 teaspoons dried thyme)
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- 1 teaspoon smoked paprika
- 2 tablespoons fresh lemon juice
- 2 pounds Yukon Gold potatoes (or Russets)
- ½ cup warm whole milk (or almond milk)
- 4 tablespoons unsalted butter
- 3 tablespoons sour cream (or Greek yogurt)
- 2 cloves garlic, roasted and mashed (optional)
- Salt and white pepper to taste
- Chives for garnish
Instructions
- Prepare the Pork Chops: Season generously with salt, pepper, and smoked paprika. Rest for 15 minutes.
- Start the Mashed Potatoes: Peel and cube potatoes, place in cold water with salt, boil, then simmer until fork-tender.
- Cook the Perfect Pork Chops: Heat skillet, add olive oil and 2 tbsp butter, cook chops for 4-5 minutes on each side until 145°F.
- Create the Buttery Garlic Sauce: Remove chops, add remaining butter, garlic, and thyme to skillet, stir in lemon juice, then return chops.
- Perfect the Mashed Potatoes: Drain potatoes, steam dry, add warm milk, butter, sour cream and mash until smooth. Season to taste.
Notes
Allow pork to rest before cooking to avoid dryness. Use warm ingredients for mashed potatoes to achieve creaminess.
