Description

A delightful summer treat combining juicy blueberries with tangy lemon frosting, perfect for gatherings.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk (or regular milk with a splash of lemon juice)
  • 1 ½ cups fresh blueberries
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • Zest of 1 lemon
  • 23 tablespoons fresh lemon juice
  • A pinch of salt

Instructions

  1. Preheat Your Oven: Start by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set it aside.
  3. Cream the Butter and Sugar: In a large mixing bowl, use an electric mixer to beat together the softened butter and sugar until it’s fluffy (about 3-4 minutes).
  4. Add Eggs and Vanilla: Mix in the eggs one at a time, then toss in the vanilla extract.
  5. Combine Wet and Dry: Gradually add the flour mixture to the creamed butter mixture, alternating with the buttermilk. Gently fold in the blueberries.
  6. Bake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Cool the Cakes: Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks.
  8. Make the Lemon Frosting: In a bowl, beat the softened butter until creamy. Gradually add the powdered sugar and mix well. Stir in the lemon zest, lemon juice, and a pinch of salt.
  9. Frost the Cake: Once the cakes are completely cool, spread a layer of lemon frosting between the layers and over the top.
  10. Serve and Enjoy: Slice it up, serve it to your loved ones, and enjoy!

Notes

Use frozen blueberries straight from the freezer for a moist cake. Adjust baking time if using a different pan size.
