Instructions
- Preheat Your Oven: Start by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set it aside.
- Cream the Butter and Sugar: In a large mixing bowl, use an electric mixer to beat together the softened butter and sugar until it’s fluffy (about 3-4 minutes).
- Add Eggs and Vanilla: Mix in the eggs one at a time, then toss in the vanilla extract.
- Combine Wet and Dry: Gradually add the flour mixture to the creamed butter mixture, alternating with the buttermilk. Gently fold in the blueberries.
- Bake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool the Cakes: Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks.
- Make the Lemon Frosting: In a bowl, beat the softened butter until creamy. Gradually add the powdered sugar and mix well. Stir in the lemon zest, lemon juice, and a pinch of salt.
- Frost the Cake: Once the cakes are completely cool, spread a layer of lemon frosting between the layers and over the top.
