- 4 salmon fillets (6–8 oz each), skin-on and at least 1-inch thick
- 2 tablespoons olive oil
- 3 tablespoons blackening seasoning
- 2 cups fresh spinach, chopped
- 4 oz cream cheese, softened
- 1/2 cup Parmesan cheese, freshly grated
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon red pepper flakes
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the salmon by creating a pocket in each fillet.
- Make the filling by mixing spinach, cream cheese, Parmesan, garlic, lemon juice, and red pepper flakes.
- Stuff each salmon pocket with the mixture and season with blackening spice.
- Cook the salmon in a skillet or transfer to the oven until internal temperature reaches 145°F.
- Rest the salmon for 3-5 minutes before serving with garnishes.
Notes
Allow cream cheese and salmon to come to room temperature before preparation for more even cooking. Make sure to let the filling sit to meld the flavors.
