- 1½ cups graham cracker crumbs
- ⅓ cup unsalted butter, melted
- 3 tablespoons granulated sugar
- ¼ teaspoon cinnamon (optional)
- 16 ounces cream cheese, room temperature
- ⅔ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup sour cream
- 2 cups fresh strawberries, hulled and diced
- 3 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
Instructions
- Preheat your oven to 325°F (165°C) and line a mini muffin tin with paper liners.
- Combine graham cracker crumbs, melted butter, sugar, and cinnamon in a bowl. Mix until resembling wet sand. Press about 1 tablespoon into the bottom of each muffin cup.
- Beat cream cheese until smooth, then add sugar gradually. Incorporate eggs one at a time, folding in vanilla and sour cream until smooth.
- Cook strawberries, sugar, and lemon juice over medium heat until juices are released. Add the cornstarch mixture and cook until thickened.
- Spoon about 1½ tablespoons of cheesecake filling over each crumb base and top with strawberry mixture and reserved crumble.
- Bake for 15-18 minutes until edges are set. Cool completely before refrigerating for at least 3 hours.
Notes
For a healthier version, consider using lower-fat cream cheese and Greek yogurt. These bites can be frozen for up to 3 months.
