- 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
- 4 cups chicken broth
- 1 cup frozen mixed vegetables
- 1/2 cup Bisquick mix
- 1 cup milk
- 1 tablespoon butter
- Salt and pepper to taste
- Optional: Fresh parsley for garnish
Instructions
- Cook the chicken: In a large pot, melt the butter over medium heat. Add the diced chicken, season with salt and pepper, and sauté until it’s no longer pink, about 5 minutes.
- Add the broth: Pour in the chicken broth and bring it to a boil.
- Toss in the veggies: Add the frozen mixed veggies to the pot, cooking everything for about 5 more minutes.
- Prepare the dumplings: In a separate bowl, mix the Bisquick and milk until just combined.
- Dollop the dumplings: Drop spoonfuls of the dumpling batter over the boiling chicken mixture.
- Simmer: Lower the heat and cover the pot. Let it simmer for about 10-12 minutes, or until the dumplings are cooked through.
- Serve it up: Garnish with fresh parsley and serve hot.

Customize the vegetables based on your taste. Leftovers can be stored in an airtight container for up to 3 days.
