Ingredients

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 cup frozen mixed vegetables
  • 1/2 cup Bisquick mix
  • 1 cup milk
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Cook the chicken: In a large pot, melt the butter over medium heat. Add the diced chicken, season with salt and pepper, and sauté until it’s no longer pink, about 5 minutes.
  2. Add the broth: Pour in the chicken broth and bring it to a boil.
  3. Toss in the veggies: Add the frozen mixed veggies to the pot, cooking everything for about 5 more minutes.
  4. Prepare the dumplings: In a separate bowl, mix the Bisquick and milk until just combined.
  5. Dollop the dumplings: Drop spoonfuls of the dumpling batter over the boiling chicken mixture.
  6. Simmer: Lower the heat and cover the pot. Let it simmer for about 10-12 minutes, or until the dumplings are cooked through.
  7. Serve it up: Garnish with fresh parsley and serve hot.

Notes
