This Bacon Cheeseburger Meatloaf combines the nostalgia of traditional meatloaf with the bold flavors of a bacon cheeseburger for a satisfying meal.

- 2 pounds ground beef (80/20 lean-to-fat ratio)
- 8 strips bacon, divided (6 chopped, 2 for topping)
- 1 cup shredded cheddar cheese (or pepper jack for extra heat)
- ½ cup diced onion
- ¼ cup diced pickles (dill or sweet)
- 2 cloves garlic, minced
- ½ cup breadcrumbs (panko preferred)
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon ketchup, plus ¼ cup for glaze
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ teaspoon smoked paprika
Instructions
- Preheat your oven to 350°F (175°C). In a skillet over medium heat, cook 6 strips of chopped bacon until crispy but not burnt (approximately 5-7 minutes).
- Combine ground beef, cooked bacon pieces, shredded cheese, diced onion, pickles, minced garlic, breadcrumbs, eggs, Worcestershire sauce, Dijon mustard, 1 tablespoon ketchup, salt, pepper, and smoked paprika in a large mixing bowl. Mix gently with your hands until just combined.
- Shape the meat mixture into a loaf and place it on a lined baking sheet or in a loaf pan.
- Lay the remaining 2 strips of bacon lengthwise across the top of the meatloaf.
- Mix ¼ cup ketchup with a tablespoon of brown sugar (optional) and brush this mixture over the top and sides of the meatloaf.
- Bake for 60-70 minutes or until the internal temperature reaches 160°F (71°C).
- Rest for 10 minutes before slicing to allow juices to redistribute.
Notes
Serve with garlic mashed potatoes or a crisp side salad for a classic pairing.
