  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 pound (450g) cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • ¼ cup beef broth
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • 4 slices Swiss cheese (preferably aged)
  • 4 brioche burger buns
  • 2 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • Butter lettuce leaves
  • Thinly sliced red onion

Instructions

  1. Prepare the Burger Patties: Gently place the ground beef in a large bowl and sprinkle with Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Using your fingertips, lightly incorporate the seasonings without overworking the meat. Form into four patties about ¾-inch thick, making a slight depression in the center with your thumb to prevent dome formation.
  2. Chill the formed patties for 15 minutes while preparing other components.
  3. Sauté the Mushrooms: Heat butter and olive oil in a large skillet over medium-high heat. Add mushrooms in a single layer and let them cook undisturbed for 3-4 minutes. Stir and continue cooking for another 3 minutes.
  4. Create the Mushroom Topping: Add minced garlic and thyme to the mushrooms, stirring until fragrant. Pour in beef broth and balsamic vinegar, simmering until reduced to a glossy sauce.
  5. Cook the Burgers: Heat a cast-iron skillet or grill to medium-high heat. Cook the burgers for 4 minutes on the first side. Flip and cook for 3-4 minutes more, topping with Swiss cheese during the final minute.
  6. Assemble Your Masterpiece: Lightly toast the brioche buns, spread mayonnaise on the bottom half and Dijon mustard on the top half. Layer with lettuce, cheese-topped patty, mushroom mixture, and red onion. Serve immediately.
