- 2 teaspoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt

- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 pound (450g) cremini or button mushrooms, sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- ¼ cup beef broth
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- 4 slices Swiss cheese (preferably aged)
- 4 brioche burger buns
- 2 tablespoons mayonnaise
- 2 tablespoons Dijon mustard
- Butter lettuce leaves
- Thinly sliced red onion
Instructions
- Prepare the Burger Patties: Gently place the ground beef in a large bowl and sprinkle with Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Using your fingertips, lightly incorporate the seasonings without overworking the meat. Form into four patties about ¾-inch thick, making a slight depression in the center with your thumb to prevent dome formation.
- Chill the formed patties for 15 minutes while preparing other components.
- Sauté the Mushrooms: Heat butter and olive oil in a large skillet over medium-high heat. Add mushrooms in a single layer and let them cook undisturbed for 3-4 minutes. Stir and continue cooking for another 3 minutes.
- Create the Mushroom Topping: Add minced garlic and thyme to the mushrooms, stirring until fragrant. Pour in beef broth and balsamic vinegar, simmering until reduced to a glossy sauce.
- Cook the Burgers: Heat a cast-iron skillet or grill to medium-high heat. Cook the burgers for 4 minutes on the first side. Flip and cook for 3-4 minutes more, topping with Swiss cheese during the final minute.
- Assemble Your Masterpiece: Lightly toast the brioche buns, spread mayonnaise on the bottom half and Dijon mustard on the top half. Layer with lettuce, cheese-topped patty, mushroom mixture, and red onion. Serve immediately.

For healthier alternatives, consider using ground sirloin or bison, portobello caps as buns, or Greek yogurt instead of mayonnaise.
