A quick and comforting soup made with rotisserie chicken and mushrooms, perfect for busy weeknights or cozy evenings.
Ingredients

- 1 rotisserie chicken, shredded
- 8 oz mushrooms, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp thyme (dried or fresh)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped parsley for garnish (optional)
Instructions
- In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent. Toss in the garlic and mushrooms, and cook until mushrooms are tender, about 5 minutes.
- Pour in 4 cups of chicken broth and let it come to a simmer.
- Stir in the shredded rotisserie chicken.
- Reduce heat to low, stir in heavy cream, thyme, and season with salt and pepper. Let sit for a few minutes.
- Once heated through, ladle into bowls, garnish with fresh parsley, and serve.
Notes
Feel free to mix and match types of mushrooms for added flavor, and consider substituting heavy cream with half-and-half for a lighter version.
