- 2 large sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 8 oz goat cheese, softened
- 2 tablespoons cream cheese, softened
- 1–2 tablespoons honey
- Fresh thyme leaves (optional)
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
- 1 tablespoon balsamic glaze
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4-inch rounds.
- Toss the sweet potato rounds in a bowl with olive oil, salt, pepper, and smoked paprika, then spread on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, flipping halfway through until golden and tender.
- In a mixing bowl, combine goat cheese, cream cheese, and honey. Beat until smooth and creamy; add thyme if desired.
- Once the sweet potato rounds are roasted, let them cool a minute and then add whipped goat cheese on each round.
- Top with dried cranberries, chopped pecans, and drizzle with balsamic glaze.
Notes
These rounds keep well in the fridge for a couple of days. Reheat in the oven before serving.
