  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 8 oz goat cheese, softened
  • 2 tablespoons cream cheese, softened
  • 12 tablespoons honey
  • Fresh thyme leaves (optional)
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1 tablespoon balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/4-inch rounds.
  3. Toss the sweet potato rounds in a bowl with olive oil, salt, pepper, and smoked paprika, then spread on a baking sheet lined with parchment paper.
  4. Bake for 25-30 minutes, flipping halfway through until golden and tender.
  5. In a mixing bowl, combine goat cheese, cream cheese, and honey. Beat until smooth and creamy; add thyme if desired.
  6. Once the sweet potato rounds are roasted, let them cool a minute and then add whipped goat cheese on each round.
  7. Top with dried cranberries, chopped pecans, and drizzle with balsamic glaze.

Notes

These rounds keep well in the fridge for a couple of days. Reheat in the oven before serving.
