Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 4 strips of bacon, chopped
  • 4 oz blue cheese, crumbled
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: balsamic reduction for drizzling

Instructions

  1. Preheat your oven to 400°F (about 200°C).
  2. In a large mixing bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper.
  3. Throw in chopped bacon pieces.
  4. Spread the Brussels sprouts and bacon mixture on a baking sheet and roast for about 20-25 minutes or until tender and crispy.
  5. Sprinkle blue cheese over the top and roast for an additional 5 minutes.
  6. Drizzle with balsamic reduction if desired, then serve warm.

Notes

Feel free to add garlic or red pepper flakes for some heat. For a lighter option, substitute bacon with turkey bacon or smoked paprika.
