A heartwarming recipe of rich and tender short ribs simmered with onions, served with gooey Gruyère cheese toast. Perfect for cozy evenings.

- 3 to 4 pounds bone-in short ribs
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 1 cup red wine
- 4 cups beef stock
- 2 tablespoons fresh thyme leaves or 1 tablespoon dried thyme
- 2 tablespoons Worcestershire sauce
- 4 slices of crusty bread (baguette or sourdough)
- 1 cup Gruyère cheese, grated
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Season short ribs with salt and pepper. Heat olive oil in a large pot over medium-high heat and sear short ribs for 5-7 minutes on each side until browned. Remove and set aside.
- In the same pot, add sliced onions and caramelize for 15-20 minutes, stirring occasionally. Add garlic and cook for another minute.
- Pour in red wine, bring to a simmer and reduce for 5 minutes. Return short ribs to the pot, add beef stock, thyme, and Worcestershire sauce, bring to a boil, cover, and simmer on low for 3 hours until tender.
- About 10 minutes before short ribs are done, preheat oven to 400°F (200°C). Place bread on a baking tray, top with Gruyère cheese, and bake for 5-7 minutes until bubbly and golden.
- Serve short ribs with the sauce on plates, topped with cheesy toast and sprinkle with fresh parsley.
Notes
Leftovers are great and get better the next day. Can substitute Gruyère with provolone or a blend of mozzarella and Parmesan.
