- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 1 tsp salt
- 2 tbsp unsweetened cocoa powder
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tbsp red food coloring
- 1 tsp vanilla extract
- 1 tsp white vinegar
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 ½ cups fresh strawberries, pureed
- 1 cup heavy cream
- Fresh strawberries, halved (for topping)
- Whipped cream (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
- In another bowl, mix the vegetable oil, buttermilk, eggs, food coloring, vanilla, and vinegar. Pour into the dry ingredients and mix until combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Let cool for 10 minutes, then transfer to a wire rack.
- Beat the softened cream cheese until smooth, then add the powdered sugar and vanilla.
- Stir in the puréed strawberries, then whip the heavy cream until soft peaks form and gently fold into the mixture.
- Once the red velvet layer is cool, spread the cheesecake mixture over the top.
- Cover and chill in the refrigerator for at least 4 hours (or overnight).
Notes
A clean toothpick test might not always indicate doneness; look for a firm center that bounces back slightly when pressed. You can substitute strawberries with raspberries or blueberries if needed.
