- 5 large egg whites (room temperature)
- 1 ¼ cups granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 pint fresh strawberries, hulled and sliced
- 2 passionfruits, halved
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat your oven to 225°F (110°C) and line a baking tray with parchment paper.
- Beat the egg whites until soft peaks form, then gradually add sugar, beating until you reach stiff peaks.
- Fold in the vinegar, cornstarch, and vanilla extract until well combined.
- Shape the meringue into a tree on the baking tray and bake for 1 hour and 30 minutes. Cool with the oven door ajar.
- Whip the heavy cream and powdered sugar until soft peaks form.
- Once the pavlova has cooled, spread the whipped cream on top, and decorate with sliced strawberries, passionfruit pulp, and mint leaves.
Notes
Ensure no egg yolk contaminates the egg whites for best results. Allow it to cool completely to avoid cracking.
