Ingredients
For the Chicken Meatballs:
🐔 1 lb ground chicken
🧄 2 cloves garlic, minced
🧅 2 tbsp finely chopped onion
🌿 2 tbsp fresh parsley, chopped
🧀 1/4 cup grated Parmesan cheese
🥚 1 large egg
🧂 Salt & 🧂 pepper to taste
For the Soup:
🧈 1 tbsp olive oil or butter
🥕 1/2 cup diced carrots
🧅 1/2 cup diced onion
🌿 2 cloves garlic, minced
🍗 4 cups chicken broth
🥒 2 medium zucchinis, spiralized into zoodles
🌿 1 tsp Italian seasoning
🧂 Salt & pepper to taste
🍋 Optional: lemon juice for serving
🌿 Fresh parsley for garnish

Make the Meatballs:
In a bowl, mix ground chicken, garlic, onion, parsley, cheese, egg, salt, and pepper. Form into 1-inch balls. -
Sear the Meatballs:
Heat oil in a pot and brown meatballs on all sides (they don’t need to be fully cooked through). Set aside. -
Sauté the Veggies:
In the same pot, sauté onion, carrot, and garlic until softened. -
Build the Soup:
Add broth, Italian seasoning, and meatballs. Simmer for 15–20 minutes until meatballs are fully cooked. -
Add Zoodles:
Stir in spiralized zucchini and cook for 2–3 minutes until just tender. -
Finish & Serve:
Adjust seasoning, add lemon juice if desired, garnish with parsley, and serve warm.
Notes
Zoodles cook quickly—add them last to avoid mushiness.
You can substitute turkey for chicken.
For more fat, add a spoonful of ghee or coconut cream.
