Fluffy, melt-in-your-mouth marshmallows made right at home! These Homemade Marshmallow Bites are perfect for snacking, gifting, or floating in a cozy mug of hot chocolate. No preservatives—just pure, pillowy sweetness.
Ingredients
💧 3 packets unflavored gelatin (about 21g)
💦 1/2 cup cold water (for blooming gelatin)
🥄 1 cup water (for syrup)
🍚 1 1/2 cups granulated sugar
🍯 1 cup light corn syrup
🧂 1/4 tsp salt
🍨 1 tbsp vanilla extract
❄️ Powdered sugar or cornstarch for dusting
Instructions
In a large bowl, sprinkle gelatin over 1/2 cup cold water. Let bloom for 10 minutes.
In a saucepan, combine 1 cup water, sugar, corn syrup, and salt. Heat over medium-high until it reaches 240°F (115°C) on a candy thermometer.
Carefully pour hot syrup into the gelatin mixture while mixing on low speed.
Increase mixer speed to high and beat for 10–12 minutes until thick, fluffy, and tripled in volume.
Add vanilla extract and mix just until combined.
Pour mixture into a greased and powdered sugar-dusted pan.
Let set uncovered at room temperature for at least 6 hours or overnight.
Cut into bite-sized cubes and dust with powdered sugar to prevent sticking.
Notes
For flavored variations, replace vanilla with peppermint, almond, or citrus extracts.
Add food coloring for fun pastel marshmallows.
Store in an airtight container for up to 2 weeks at room temperature.
