Description

Ingredients
- 🥕 2 cups grated carrots
- 🍍 1 cup crushed pineapple (drained)
- 🥚 3 large eggs
- 🥄 1 ½ cups granulated sugar
- 🏺 1 cup vegetable oil
- 🌾 2 cups all-purpose flour
- 🥄 1 ½ tsp baking soda
- 🥄 1 tsp baking powder
- 🥄 1 tsp cinnamon
- 🥄 ½ tsp salt
- 🥄 1 tsp vanilla extract
- 🌰 ½ cup chopped walnuts (optional)
For the Frosting
- 🧀 8 oz cream cheese (softened)
- 🧈 ½ cup unsalted butter (softened)
- 🍚 2 cups powdered sugar
🥄 1 tsp vanilla extract
Instructions
- 1️⃣ Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
2️⃣ In a bowl, whisk together eggs, sugar, oil, and vanilla.
3️⃣ In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
4️⃣ Mix dry ingredients into wet ingredients, then fold in carrots, pineapple, and walnuts.
5️⃣ Pour batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
6️⃣ Let the cake cool completely before frosting.
7️⃣ For the frosting, beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla.
8️⃣ Spread frosting over the cooled cake and enjoy!
Notes
- For a healthier version, use whole wheat flour and reduce sugar.
- Add coconut flakes for an extra tropical flavor.
