  • 200g feta cheese, cut into blocks
  • 1/4 cup green olives (Kalamata or your favorite type)
  • Fresh parsley or oregano for garnish
  • 12 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper, to taste
  • Optional: A squeeze of lemon juice for extra zing!

Instructions

  1. Start with your tomatoes—cut them into delightful wedges. Next, slice your cucumber and thinly slice your red onion.
  2. Grab a large bowl and toss in the tomatoes, cucumber, red onion, and olives. Mix gently.
  3. Lay the blocks of feta cheese on top of the salad.
  4. Drizzle olive oil and red wine vinegar over the salad. Sprinkle salt and pepper and squeeze in some lemon juice if desired.
  5. Add fresh parsley or oregano for garnish. Serve chilled or at room temperature.
