Ingredients

- 2 large ripe tomatoes, cut into wedges
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 200g feta cheese, cut into blocks
- 1/4 cup green olives (Kalamata or your favorite type)
- Fresh parsley or oregano for garnish
- 1–2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper, to taste
- Optional: A squeeze of lemon juice for extra zing!
Instructions
- Start with your tomatoes—cut them into delightful wedges. Next, slice your cucumber and thinly slice your red onion.
- Grab a large bowl and toss in the tomatoes, cucumber, red onion, and olives. Mix gently.
- Lay the blocks of feta cheese on top of the salad.
- Drizzle olive oil and red wine vinegar over the salad. Sprinkle salt and pepper and squeeze in some lemon juice if desired.
- Add fresh parsley or oregano for garnish. Serve chilled or at room temperature.
Notes
You can prep veggies in advance for convenience. Mix in grilled chicken or chickpeas for a complete meal.
