- 2 pounds beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups beef broth
- 1 cup dry white wine
- 2 tablespoons fresh thyme, or 1 tablespoon dried thyme
- Salt and pepper to taste
- 1 cup Gruyere cheese, grated
- French bread for serving (optional)
Instructions
- Season the beef short ribs with salt and pepper.
- In a large pot, heat olive oil over medium-high heat and sear the short ribs until browned on all sides, about 3-4 minutes per side. Remove and set aside.
- In the same pot, lower heat to medium and add the sliced onions. Stir occasionally until soft and golden, about 15-20 minutes.
- Add the minced garlic and cook for an additional minute. Pour in the white wine and deglaze the pot, simmering for about 5 minutes.
- Return the short ribs to the pot, add beef broth and thyme, and season with more salt and pepper. Bring to a boil, reduce heat to low, and cover. Simmer for 2-3 hours, until beef is tender.
- Preheat the oven to broil. Ladle the soup into oven-safe bowls, top with Gruyere cheese, and broil until the cheese is bubbly and golden brown.
Notes
Make it ahead and store in the fridge or freeze for up to three months. Add mushrooms or balsamic vinegar for extra flavor.
