- 1 lb ground beef
- 1 medium onion, diced
- 2 cups elbow macaroni
- 3 cups beef broth
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup shredded cheddar cheese (Optional for those counting calories)
- 1 cup shredded mozzarella cheese
- 1 tsp garlic powder
- Salt and pepper to taste
- Optional: chopped parsley for garnish

Preparation
- In a large skillet, brown the ground beef and diced onion over medium heat until the beef is no longer pink (about 5-7 minutes). Drain excess fat if needed.
- Stir in the beef broth, diced tomatoes, and elbow macaroni. Add garlic powder, salt, and pepper. Let it simmer uncovered until the macaroni is tender, about 10-12 minutes.
- Once the macaroni is soft, reduce the heat and mix in the cheddar and mozzarella. Stir until the cheese is melted.
- Scoop onto plates or into bowls, and sprinkle with chopped parsley for garnish.
- Serve hot and enjoy!
